When I say Troll Bogeys, what I actually mean is Guacamole! An excellent dip for your Cheesy Wands, Deep-fried Elf Ears (Tortilla Chips) or Gurdyroot chips (beetroot or regular crisps).
1/2 red onion (very finely chopped)
2-3 mild chilies (finely chopped)
1-2 ripe tomatoes (finely chopped)
3 ripe avocados
1 handful of fresh coriander (roughly chopped)
1 lime (juice only)
Salt to taste
Freshly ground black pepper
Water if needed
Put the chilies, onion and coriander into a pestle and mortar and grind them into a paste, add a little of the lime juice to loosen the mixture.
Peel and de-stone the avocados (carefully!) put the flesh into a large bowl and mash until fairly smooth - add the rest of the lime juice as you mash.
Add the contents of the pestle and mortar to the avocado, add the tomatoes, salt to taste and plenty of freshly ground black pepper.
Serve immediately, or store in an airtight container in the fridge.
